I have not tried this but it looks interesting. Using koji rice to quick dry age beef.

I do this all the time at the campground..put rice in my salt and spices shakers.  Keeps the moisture from clumping things together. ALSO, I dropped my phone in some water,,oh gawd, but I dried it off and put it in a bag of rice overnight..phone is still working several years later. there is something to this. Just never tried on meat.  just sayin.  .☆´¯`•.¸¸. ི♥ྀ.

So here is a little more on Koji....      http://www.homegrown.org/forum/topics/koji-rice-101

I bet Pam's on to something with plain rice though. I bet it would speed up the ageing process quite well.
