Title: Cold Grate Seared Ribeye Steak

I was at Sam’s Club this morning and found a 3 pack of choice Angus ribeye steaks. They looked way too good to pass up. 
All 3 were about 2 inches with a lot of good marbling. Since there is just the two of us we decided to do just one tonight for
dinner. I salted it and let it sit in the refrigerator for about 6 hours.

This is my set up tonight. I am using the Jumbo Joe with the small SnS and have it on my new Weber grill table (https://smile.amazon.com/gp/product/B00AHUR0OC/ref=oh_aui_detailpage_o02_s00?ie=UTF8&psc=1). I started with
way too many coals as I forgot how small this is compared to my bigger Weber. So my wife wanted a couple of chicken breasts
cooked for chicken salad and that is what is on there at this time.

I do believe this is the best steak I have ever eaten.  I did not use any seasonings other than dry brine it with salt and right before
I seared it I put a light coat of olive oil on it and a heavy dose of fresh ground pepper. The beef flavor definitely shined through!

I plan on cooking a chuck roast tomorrow on the Jumbo Joe and I know now not to start with 20 coals. I will probably just light 10
and go from there.

Yep, pretty much the same except no water trough. I just use a loaf pan with water. It does have the ventilated basket.
