Saw one of these bad boys at Sams and thought about making it using the SnS

Overnight dry brine and on the cold side until ready to sear.

One minute turn grates repeat until two minutes per side

That looks like the Cowboy Ribeye I cooked recently from Sam's. I saw more on the meat counter, but couldn't bring myself to pull the string. BIG misteak! I will be going back to get a couple for the freezer.

It was real good. Odie loved his bone. It's amazing how they disappear for a couple of hours
