Title: BBQ-Weekend in the Black Forest
Post by: Wing Commander on December 17, 2012, 03:40:45 AM
I spent this weekend with some BBQ-mates in a 300 years old house in the Black Forest far off any civilisation without mobile phone, internet, tv etc. Everybody was cooking something, so we had enough to eat - well, in fact we've been eating most of the time... ;) There was 1,6 ft. high snow, so we just could use a small and cheap 18" kettle-grill (we have there a little off set smoker and an UDS, too, but they couldn't be moved through the snow).

I started friday with some lamb chops that I've marinated with EVOO, rosemary, garlic and salt. After grilling they've been served with hazelnut-persil-pesto.

One of my friends cooked some scallops on rosemary with a sauce of butter, sparkling wine and garlic.

Other friends offered some homesmoked ham: left a "Kasseler" from a pork loin and right a "Prager Schinken" from a pork shoulder.

Saturday I cooked some salsiccia as a starter.

Then I prepared some road apples: tomatoes stuffed with pulled chicken from thighs with hazelnut-persil-pesto and Mozarella cheese and covered with the chicken skin.

This was followed by some oysters one of my friends made with a sauce of sparkling wine, onions and chili powder.

Then we had a salmon that got bondaged to fit on that small kettle.

Then one mate cooked a regional delcacy: potato sausage (which is in fact a kind of blood sausage with potatoes), sauerkraut and homemade "Schupfnudeln" (which is a type of thick noodles made of potatoes, flour and eggs). Looks messy, but tastes delicious.

And last but not least here's a picture of the house we lived in that weekend as we left:

Y'all know how to party over in Deutschland! I imagine there were a few fine German beers consumed also. My passport is up to date, I can make it over there pretty quick.
