As a follow-up to my previous post about the size of a prime rib fitting on the PBC. So the 7 bone weighed 17.5 lbs and measured 17 1/2" long....damn near perfect!

Raleys seasoned the meat after removing the chime bone and tying it back on. I followed the Meathead process and did not bring the meat to room temperature. Pulled out of the cooler and straight to the PBC. Meat was about 50 degrees to start with.

The temperature inside the barrel started at 300, held at 275 for about the first hour and then dropped to about 250 for the second hour. Hour 3 it was about 225.  I was good with this as it hit 125 at 3 hours and 15 minutes. 

Rested on the counter with loose foil for about 45 minutes. It was a huge hit for the 19 people who ate it.
