To me the "fakiest" BBQ is the sort of afterthought section on some restaurant menus where they take a few of the burgers, chops, or whatever and smear bad sauce all over them  :'(

Agreed.

Hard to make firm and fast rules about what is real. One of my favorite Italian places is in a strip mall - just happens to be there - great food, they care about what they cook - just live in a strip mall.

You can't catch a fish if you don't get a line wet...

Yep, I'm embarrassed for them.  Usually not hard to recognize either.

One other thing that I don't ever do is buy a BBQ sauce that has liquid smoke in it.  I'm smoking my food and I don't don't need the artificial version.

I have had a gripe with restaurants that proudly proclaim "fall off the bone ribs" The way they make it sound like they split the atom. It really is talking down to anybody who knows anything about BBQ.

What the heck is wrong with pellets?

Nobody pick on Mama's Sizzler ribs.

Pappy, anyone can make fall off the bone ribs if you nuke em long enough  :D :D

Nothing wrong with pellets or any heat source, just get er done and cook up some good Que
