Any meatball you like will do John!
Couple of variations to try:
1. Dust the bacon with your favorite seasoning or BBQ Rub ( even better - BACON RUB
)
2. Dust on a bit of the chosen seasoning on the meat ball after you wrap it. Apply to the "crown" above the bacon, and it will marinade while it cooks.
3. Make a finishing sauce by heating a jar of preserves in the microwave ( whatever flavor you like - I like blackberry, just pleas remove the lid before heating
) when nice and liquid, usually 1-2 minutes - pour thru a fine strainer, and using a rubber spatula, squeeze all of the liquid into a bowl.
Add a "heat source" to taste - a jalapeno powder or similar- then add a bit of apple cider vinegar to thin it out so that you can put it in a squeeze bottle.
Now, let it cool down - add a bit more apple cider vinegar if needed so that it is a nice thick syrup consistency, but not so thin that it runs off of the meat balls easily.
Lastly - apply in nice ribbons to the meatballs after they are cooked and ready to serve.
