My wife was supposed to go to dinner with a friend, but her plans fell through. I was still able to make myself a beautiful hunk of bone-in ribeye. I had rubbed it down with Sweet Lou's Roast Rub (thanks to
The Smoke for turning me onto this, as it is my go to seasoning when I want something more than just S/P but nothing crazy.) and left it in the fridge overnight.
Loaded my Slow n Sear charcoal basket for my Jumbo Joe with 2 pieces of cherry wood and lit my chimney starter with cowboy lump charcoal. Once the chimney was ready I dumped it let the cherry wood catch before putting the lid on and letting it get used to the less airflow. Once it was ready I slowly brought the rib eye up to 110F before removing the ribeye to rest while the allowed the coals to stoke and get ripping hot to sear it and then cook some king salmon for my wife. Once the coals were ready I seared the outside for 30 seconds twice (30sec flip,30 sec flip, repeat one more time). Once seared I let rest in the microwave while I worked on her salmon. Sorry for no pictures of the cook itself but if you don't have a charcoal basket/standard slow n sear, you are missing out. I cut and plated with some grilled zucchini from my neighbor's garden and some white beans and kale from Giada's recipe (
