On the way home from the dentist I decided to stop at Krogers to pick up some necessities. Strolled by the meat department and noticed that they had choice briskets on sale for $1.99/lb. So I picked up a 12.23 lb. They only had 3 left, the other 2 didn't look good (lot of fat) and didn't past the bend test.

Trimmed. Took off about 2.5lbs of trimmings.
All trimmed. This looks like a good one. Flat is pretty even thickness. And there is a clear delineation between the flat and the point. Now I have to decide if I want to cook it as one piece or point and flat separate. I ordered some beef tallow from Amazon so I guess I have time before I have to make a decision.
