Strip Steaks Keen's style

Jun 02 2013

The other day I had bought 2 small strip steaks at my butchers. I usually don’t do strip steaks but these two had some marbling and just the right size for us. I made some gorgonzola, chive, garlic, butter for serving on top.

Then this am I read Tees post about steaks done Keen’s style and watched the video. Looked good to me and worth trying.

I had a bunch of asparagus I would throw on the smoker at 300 deg. add the steaks for about 10 minutes then sear on my Weber Q100 gas grill. I made some herb potato salad for another side.

It tasted great. I had the steaks closer to med. than med.  rare; but with a little work should be able to get it right. I probably had the smoker a little too hot; had it at 300 deg. but that was about 325 deg. grill level. A thicker steak would be easier to get right too.

I just added some kosher salt to the steaks before searing; the Weber cast iron grate does a good sear.
For me the gorgonzola butter really tops off a steak.

Looks great. Have to give the cheese a go on a steak.

Is that carrots in the taters.  How did you do those taters?
