We are heading back south on Wednesday. My neighbor mentioned smoked eggs.

I still have two jars of those smoked pickled eggs I did before the KOA get-together.. My son will be getting them for Christmas.  My daughter-in-law will probably not like me for a while.

I did our first pickled eggs a couple of months ago... and I'm not at all ashamed to say I was HUGELY relieved that James didn't much care for the them!  (A texture thing, I guess.)  The jalapeno pickle aftermath was enough to curl a few nose hairs, so this one had me a little nervous.   

Although after looking through the cold smoked eggs... I might have to take a deep breath and try again, because those sound awesome!
