Title: Country Ribs on the pellet grill
Post by: Roget on February 21, 2018, 04:52:45 PM
I did Country style ribs for our dinner last night.

I preheated my GMG to 275°.
Seasoned my ribs with SPG & applewood rub.
Smoked for 1 hour & 15 min.

I put the ribs in a foil pan with a mixture of BBQ sauce & orange juice.
Covered with foil lid and cooked for another hour to a temp of 198°.

I removed them from the pan and back on the grates.
Basted & let the sauce firm up for 10 minutes.

Plated with boiled potatoes (v's favorite  ;) ;)) Green beans & white bread.

Came out pretty good. Very good flavor & good mixture of lean & fat.

I think they will be better next time if I cook them a bit lower & slower.
V said they were perfect so as long as she is happy I have done my job. :D :D

Thanks for looking.

Love me some country style ribs ... those look great.  They take on marinade very well (overnight in a citrus mojo for a Cuban-style prep) or dry rub (also overnight in the fridge).  If you're wanting something interesting. smoke them conventionally but pull them 10 degrees lower than your target temp.  Rest, then slice or chunk them and saute in a skillet with a bit of olive oil, crushed garlic, and herbs/spices.  Kind of a smoked carnita variation that really carries flavor well ... could easily be finished on a grill rather than saute; also great for tacos.

They look good from here.

I love CSR's.  They're a versatile cut.  Sometimes we do them hot & fast, and sometimes low & slow like regular ribs. They're great either way.

Those CSR's are looking mighty good. On the pit or even in a crock pot, you are in for a tasty meal.
