Just read this thread & wanted to comment on the Bradley. I have a 4 rack digital that I purchased in 2012. Have not used it as much as did at first, but just put a 8# butt on this morning & wanted to pass along an experience that I stumbled upon. Put a 6" x 8"steel plate on the top shelf after some of the dreaded black rain showed up on 1 cook. It was rather windy the first time I used this setup, but noticed the plate seemed to even out hot & cold spots better in smoker. After several more cooks with steel plate that I inverted the shelf for more room on 2nd shelf my cooks were going faster than expected when breezy. Have the dual element with PID mod. Don't use my homemade shelter when breezy & cooks still are faster than expected. That steel plate seems to force the air away from the center toward the outside better, but still need more testing. Haven't taken any pictures of setup just yet. Comments or questions welcome.
