Today I will be cooking some Cornell chicken on the Weber kettle, using the Slow n Sear and Drip n Griddle. I am burning
Original Natural Hardwood Charcoal with 1 chunk of apple wood. I got this
recipe from Amazing Ribs.
I am also cooking an acorn squash in the pellet grill. The
recipe came from mr bbq from MAK grills.
About 45 minutes into the cook and both are looking good. I basted the chicken every 10 minutes with the Cornell chicken
marinade. I was cooking at 250. After the last baste of marinade (1 hour mark) I kicked up the grill to 325 to finish. I am
cooking the squash at 375, using Lumberjack MHC pellets.
Acorn squash is done and will rest for about 10 minutes.
Chicken is ready to come off the grill.
My plate!
This is the first time I have attempted either of these. The Cornell chicken and squash were awesome and my wife requested that
I do a couple of whole chickens at Thanksgiving with this recipe. I like all types of squash, but I got to say this is now my favorite,
especially fixed this way.
