Great idea! My son likes to slow cook on his Weber, so I'm going to send this to him. Never thought about a round "heat shield" under the grate.

Looks like a great set up LA. What are you using for a heat shield?

Butt looks really good!

So how long after the butt was done did you get on the coals sustaining that temp?

Only question I have is:

What about the bottom vent?

Jack, I'm planning on writing it down as a "how to" later & posting in weber section.
Bottom vent WIDE OPEN to prevent ashes from blocking airflow.
Adjust temp with upper vent. Mine settled in well with upper bent about 60% open ( eyeball guess it's not rocket science ::))

LA, great experiment that worked out. Love it when that happens. That butt looks delicious. So how many hours did it maintain a low and slow temp over all?

It is very impressive to get those low temps with the bottom vent wide open in a grilling machine like the kettle 8) 8)
