Did a chateaubriand (filet mignon) for Valentine's Day. Low until IT reached 118 and cranked up the MB to 700 to sear. Should have pulled it at 100 IT. I would have liked it a little more rear. But overall it was very tasty. I am going to have some real nice philly cheesesteaks today.
