Hi all. Did my first cook last weekend (ribs) and just put a whole chicken in about 25 minutes ago. I will get some after pics up later this evening.
Cooker is running between 315 and 335 so far, so I'm hoping it cools a bit so it does not cook too fast. I think I need to use a little less coal than recommended next time. The cooker ran hot for the ribs as well.

I'm at 165 now after an hour. I'm gonna add some sauce and let it caramelize for a few minutes.

Thanks all. Im gonna love this cooker. Just need to get used to cooking temps and duration. Cant wait to try other meats.

Running around 300F is the norm when the weather is warmer outside.
