I've never smoked a butt this big, have a bone in 11.5lb boston butt that I need to make for a company picnic tomorrow. Need to smoke it overnight and will be using the "crutch". After I will place in a cooler with towels for as long as I need. Picnic starts tomorrow at noon. Will either shred it before I go into work or do it at my office. Not sure how much time I should give it with this size?
