Working my PBC......

I put my PBC thru the paces again yesterday using regular Kingsford Blue charcoal. I can't stand the thought of only cooking for a few hours on a fully loaded charcoal basket when you can get 7 or 8 plus hours of usable cook time out of it.

Please forgive my photography, my pictures don't convey how good things turned out!

So......up first was Roget"s meatloaf recipe from the Beef recipe forum here, moist and delicious. Then I went with my standard mixed grill with the addition of a nice 3 lb Chuck Roast that I cooked to 160, wrapped and finished at 200. It came out very good the star of the afternoon alright. It wasn't as tender as better cuts of beef but pretty tasty nonetheless!
