Mama wanted pork spare ribs and Pops wanted me to take a stab at beef ribs so.........
rubbed the spares with Drapers All-Purpose and used T's Meat Magic Rub/Marinade on the beef ribs.....hickory chunks and Apple mini-splits for the smoke....................and Kingsford for the heat ;D

I assume you got the beef racks on the bottom...

Actually the small rack on the top grate is the beef ribs. I am gonna cook em the same way I do the spares and I am going to try the 3-2-1 method. I have never had tender beef ribs so we will see...............
One other thing......this comp cook from KC always does his ribs bone side up so I am trying that as well.............

Spares came out good..that Drapers All-Purpose is a keeper.
Finally nailed beef ribs. Cooked em the same way I did the spares doing the 3-2-1.
Pops got the whole rack (it is Fathers Day), he liked the flavor of T's new meat magic rub and said the ribs were tender!!
We are just gonna have to take his word for it!! 8)
