Sunday’s dinner is Babyback ribs and sweet onion pie. The ribs were seasoned with Meathead’s Memphis Dust (http://amazingribs.com/recipes/rubs_pastes_marinades_and_brines/meatheads_memphis_dust.html).
When I prepped the ribs this morning I seasoned both sides with kosher salt and let them sit in the refrigerator
for about 4 hours. This was the first time trying it this way and it worked out excellent. The Memphis Dust is salt
free. I am cooking today on the Weber, using the Slow n Sear with applewood for smoke.
The ribs were done at the 3 hour mark and I sauced them with Daigle’s Sweet Hickory Rib sauce. Here they are

The recipe for the Sweet Onion Pie is from All Recipes (http://allrecipes.com/recipe/18334/sweet-onion-pie/). We have a bunch of Vidalia onions and needed to use
some. Here it is out of the oven.

Excellent dinner! We really liked the Sweet Onion Pie and the ribs were melt in your mouth good. The only thing
I found wrong was that I forgot that applewood is a very strong wood. I should have used 1 or 2 less chunks of
wood as they were a little smokier than we like. But they are definitely edible!

Yes nice looking ribs Mike! I have been doing the salting before applying rub for awhile now. I like the outcome....but you must have little or no salt in the rub!
The onion pie looks and sounds interesting! Will have to try!

I liked your idea with the salt. My ribs always lack flavor in the meat. Gonna try that next time. Kind of a dry brine.

Another Weber Winner, sir.
I've been rackin' 'em up on the Weber about once a week for the last month...getting some practice in for the Cookout with Bremer. Been using hickory instead if pecan - is that a good idea?
I promise to post a pic of the next rack.

Mike..I did that to the ribs when I won 2nd place in the rib cook off..salt & peppered the ribs and let them sit in frig for a while..worked great. and love the onion pie too..Vidalias work great or any sweet onions..we are about out of Vidalias for this year, Ribs look good...nice cook. .☆´¯`•.¸¸. ི♥ྀ.

I cooked these at 250 Art. Held temp real steady once I got my Weber out of the rain! ;)

Looks delicious! Good tip on the salt BTW. We have always made our rubs salt free just so we can control the amount of salt we want. We use Kosher salt as the large crystals make it easy to see how much you're applying.
I wish I would've put those 2 racks to better use yesterday. I could go for some ribs done right, and YOUR ribs were done RIGHT ;)

Zeroed in on the onion pie ???
Earlier this summer I perfected a recipe for tomato pie (posted here) because we had so many good tomatoes. Now, I gotta admit I love onions almost as much as I love GRAVY so I've got to get cooking on this one. Thanks for the inspiration ;D
