Title: pressure cooker collards

Hey..I made some new style collard with my pressure cooker..1st I chopped up some jowl bacon and added leeks to it and fried it up..smelled great then I cleaned and chopped up collard greens and added abou 1.5 cups water. Next came the bacon and leeks on top and put under pressure for 20 minutes..they came out great, great flavor..I have tried lots of things, salt pork, smoked neck bones, etc but this is the best I ever made..the pot liquor is killer in less than ahalf hour..  just sayin  .☆´¯`•.¸¸. ི♥ྀ.

not yet..but I will..concentrated on the greens first..I must say..I did good tho..modesty showing..I think you guys from the gatherings would love them...maybe I'll end up a GRITS yet. LOL   .☆´¯`•.¸¸. ི♥ྀ.

I've never had collards :(
That's how I grew up in Wisconsin. 
Collard were weeded out of the garden and lawn.
Now a convert to all Great Southern Food.

I love greens of any kind, being Italian I guess it's in the DNA. Those look wonderful Pam and thank you for sharing! I'll definitely give this a whirl on my stovetop PC.  ;)

Me too, even though I'm not Italian.  :D     My favorite (by a long shot) are turnip greens.

Cliff my favorite is kale, but in for a close second are turnip greens! They are so good and so full of great nutrients.

I thought about these collards earlier, didn't have any but did have some fresh field peas so I made them with conecuh , onions,  potatoes,mushrooms and yellow peppers sautéed in the pan first...  I made a pan of cornbread half fine and half coarse grind to go with them.
 Was mighty mighty.

You've been an Honorary GRITS ever since those biscuits and gravy! But now we are thinking about checking your DNA... ;D
