Title: 1st Pork Shoulder in SRG

It's Christmas Eve, 70° and 0430, chips in SRG, shoulder patted dry, one last rub before it goes in cage.

1630 -  200°, removed from SRG, Resting temp 190° for 2 hours.  Removed from cooler, I could feel the bones seperating from meat... sneak taste -  Oh my gosh!!!!! My teeth are a smiling, my tongue is a wagg'n and mouth's a watering!

Looks great! What's the C clamp for?
It holds the lid up so the SRG can breath better
And it's adjustable.  Found the sweet spot, the SRG stayed btween 225°-230°.
