I found this recipe on Pinterest. It is an oven version, cooking at 350. But, since it was 75 degrees today I decided to cook
them on the Jumbo Joe.
The chicken is seasoned, filled with cream cheese, green onion and smoked Pepperjack, and then wrapped with maple bacon.
I put it back into the refrigerator for a couple hours.

I am burning Royal Oak Lump Charcoal in the Jumbo Joe today, with no added wood.

45 minutes later after a quick sear the chicken is done.

My plate with some mini cob and a tossed salad. I did eat another helping of corn and chicken breast.

Chicken was delicious! The next time I make this I am going to add some jalapenos to the rest of the mixture for just a little kick.
Recipe (with my modifications)
1 lb. Boneless skinless chicken breast cut into 4 - 4 ounce pieces (I had almost 2 pounds and it made 7)
(I seasoned both sides with Loot n Booty Gold Star Chicken Rub)
4 tablespoons cream cheese
¼ cup Pepperjack cheese, shredded (I used my smoked Pepperjack)
2 tablespoons green onion, chopped
4 to 8 pieces of bacon (I used Maple bacon)
Directions
Cut chicken into 4 equal size pieces. Pound breast so it is about ¼" thick.
Mix together softened cream cheese, chopped green onions and shredded Pepperjack cheese. Put ¼ of this mixture into the middle of each piece of chicken.
Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.

Looks mighty tasty but I did not know the Slow N Sear was available for the Jumbo Joe.

Not available yet. That is foil on the bottom of my grate next to a Weber basket. I have the Jumbo Joe sitting on my 22 kettle which has the Slow n Sear. I will be buying a SnS for the Jumbo Joe when they come out.
