Found this recipe recently and made it last night, gonna give it a shot on some ribs this weekend 8)
2 jalapenos
3 granny smith apples
1 cup yellow onion, chopped
2 Tbsp garlic, minced
1 cup red bell pepper, chopped
2 Tbsp lemon juice
1 cup apple cider vinegar
2 cups sugar
2 cups apple juice

it was a bit of a process to make but it was worth it in the end, I hope it tastes just as good if not better on ribs 8)
you need to mix the jalapenos, chopped / peeled apples, onion, garlic and red pepper in a pot over medium heat to sweat them a bit for about 5 minutes. Then add the lemon juice, cider vinegar, sugar and apple juice. Boil then return to a simmer until it reduces by 1/3. That part took the longest. Then puree it and strain it and it came out awesome!

cant wait to try it one day.. We do get a carb day to eat what we want and that's looking like ribs now ;)
