This was a huge treat for us. It's been five weeks since my heart attack, and I'm happy to report that I'm doing great! For the most part Mrs H and myself have been on a plant-based diet (to help my heart heal faster and easier) but on the weekends we have a chicken meal and a fish meal. At some point I assume that I will eat a little more meat but I don't think that I will ever go back to my old ways.....my dream is to become a cranky old man someday! Hold those remarks!!! Lol
Anyway, yesterday I made up a chili-lime rub, pasted it on a whole chicken that I skinned and 1/4'ed. That was refrigerated 24 hours. This evening got the GG's heated up on the PK and threw the chicken on 5 minutes a side on GG's and finished indirect until I got an IT of 160F then removed and tented 5 minutes. Plated with a black bean-corn salad, and fresh cooked kale with hummus dressing. Absolutely wonderful. I like how the wet rub keeps the skinless chicken nice and moist.
