Had a nice 1 1/2 in ribeye in the freezer that was just begging to be used ;)
(Tom Horseman would be proud of me on this one) :) ;)
So I thought I'd try to smoke it for 30 mins low temp smoke then sear it and here is the results
Smoked 30 mins indirect with hickory pellets then removed while the temp climb and used GrillGrates
Turned out really good although a little over cooked (cause Kimmie was sharing part of it)

Thank you Tom! Wished I had the Rec-Tec mini now, that would have been perfect to use
Only thing I'm having issues getting this little Weber to sear high temp :( About 480 is as high as I can get it

I'd gladly eat that.

Slice mine thin plz with two pieces of bread.

Only thing I'm having issues getting this little Weber to sear high temp...
Don't remember where I saw it first but I've found that I can get a great sear by partially filling a starter chimney, lighting it, and putting a small grill directly on top of it. Works every time.

You can try to build the lit coals up high as they can go under the grill grates.............

Alton Brown did it on one of his shows..and it works great for searing. .☆´¯`•.¸¸. ི♥ྀ.

I do remember seeing that and I believe Pam is right it was Alton Brown.
Problem is I don't have a chimney starter any more and don't wish to use one if I can just get the Weber up to searing temps
Maybe a MOD is due ;) :D :D ??? ???

Check out BBQ Dragon fan. I bought one for half price. Works great, clamps, goose neck, plus rechargeable batteries.

Tommy I was up in block Island years ago on my boat cooking a steak the wind was really blowing in the harbor. That puppy was cooked like my grill was a blow torch so I think Tom is on to something. One of the best steaks I ever had
