Post by: TentHunteR on April 30, 2017, 04:19:35 PM
By request, here's the Tandoori style chicken recipe.  This can be used for beef or lamb as well.

Ingredients:
Enough for about 3 lbs meat

1 TBS Paprika
1/2 - 1 1/2 tsp Cayenne Pepper (1/2 tsp = mild, 1 tsp = medium, 1 1/2 tsp = hot)
2 TBS Vegetable/Olive Oil

1 cup Plain Yogurt
1 TBS Ginger-Garlic Paste  (or 1 tsp each: Granulated Garlic & Ground ginger)
2 TBS Lime (or lemon) Juice
Spice Mix  (or you could use 1 TBS Curry powder):
   - 1 tsp ground Coriander
   - 1 tsp ground Yellow Mustard
   - 1/2 tsp ground Cumin
   - 1/2 tsp Turmeric (optional)
   - 1/4 tsp ground Nutmeg
1/2 tsp Salt

In a mixing bowl, combine the Paprika, Cayenne, and oil, and allow to sit for a few minutes. This draws the red color from the paprika & cayenne, and infuses it into the oil. No need to use red food coloring.

Whisk in remaining ingredients.  Pour marinade over meat, mix and allow to marinate for 30 minutes to a few hours.
Skewer the meat (if desired).

Thoroughly cook on a very hot grill until slightly charred and done.

Cliff made it today as a trial for Mothers day.  Had to use the oven because of the big rain storm......Did not come out very good at all.......

We ate every piece & destroyed our diets ;) ;) ;) ;) ;) ;) ;)  It is a keeper except we ate too much lol. Thanks! Will use the Weber charcoal for Mothers day.

If I may ask Cliff what do you like to serve with it?

We are thinking homemade Coleslaw, Broiled potatoes, string beans.  &............... Chutney

 Again, thanks Richard

Thanks!  It's good to know someone else is enjoying it!

Since it's an Indian dish it's great with rice (Basmati especially), and any type of stir fried or sauteed veggies.  It's also excellent cut up and put on top of a salad (which is exactly what I did that afternoon).

If you wanted an Indian style veggie dish try this:  Stir fry whatever veggies you like with some of those same spices (listed in the recipe), add some tomato puree and let them cook a few minutes, then right towards the end add a little of that yogurt mixture, and you will have a vegetable Korma style dish.

If you need an easy recipe for some Naan flat bread let me know!
