Title: 2 Star, Prime Packer, CookinPellets, and 13 hours

Bought a 16 pound USDA Prime Brisket at Costco.  After trimming, it was a little over 13 lbs.

Rubbed it with a combination of onion powder, garlic powder, salt, pepper, paprika, and brown sugar.  Let it sit for 10 hours in the fridge then put it on the 2 Star at 225 with CookinPelletes 100% Hickory. 
Thirteen hours later, took it off, wrapped in peach butcher paper then foil, toweled and stuck in a cooler for 4 hours.

Sliced it and vacuumed sealed it.  However, saved a few slices, and along with some pulled pork and cheese, made a grilled sandwich on sour dough bread.

That looks great; really envy you that your Costco carries prime packer briskets. Our costco carried only non prime flats. May I ask what area you are in?

We get Prime on the Left Coast as well.

Great job on the brisket and I sure like the looks of that sammie  :thumbup:
