The difference GG's make is absolutely astounding. By moving the "sizzle" right up under the meat you get delicious "grilled" flavor. They work well on all grill types but, in my opinion, are an absolute necessity for gas grills which impart no flavor characteristics, just heat.
If you have a good smoker, the greatest steaks in the world can be produced with a reverse sear. First, give the meat a smoke bath at the lowest possible temperature. The goal is to infuse good smoky flavor, not cook them. Takes at least 30 minutes but I recommend an hour. Afterwards, pop them on a super hot grill equipped with GrillGrates and sear them to your taste specification (I like medium rare). The result is a steak with a great touch of smokiness and also that special tastiness that only comes from real grilling. Yum ;D

Hub I asked this a few months back on this forum but never go an answer. Do the Char broil IR grates do the same thing as the GG's

No. Infrared steak searing is a wonderful technique and having the capability to flash sear is nice, but it does not impart the grilled flavor that GG's do. I like IR for really tender cuts that need minimal cooking (e.g. prime beef) and that lend themselves to very rare service. GG's, on the other hand work well for any meat, but I use mine mostly for hamburgers, steaks, and chops. They get very intense heat very close to the meat, causing "splatter" back (my scientific term for "flavor") and (fringe benefit) gorgeous grill marks. I don't know if it is still there or not but there used to be a pretty good explanation of the effect on the GG web page.

Could not agree more. Thanks to them, my dad's cheap old Char-Broil gasser is now cranking out some pretty good grub on a weekly basis.
