Title: Smoked Spatchcocked Turkey or Dungeness Crab?

Boy that beast looks like something alien. Almost looks like a gigantic Dungeness Crab ... I wish !!!!!

Yeah, it's a 14 lb spatchcocked turkey that I smoked with cookinpellets.com premium perfect mix. From start to finish it took 5 hours. I smoked it breast side down but I folded back the turkey quarters. Bottom line - it turned out simply scrumptious ...

Fantastic cook! Details?  Cooking temp and prep?

Rinse turkey. Pat dry. Spatchcock turkey by removing the backbone and flattening the bird. Trim excess fat/skin. Rub under/on skin with EVOO. Season under/on skin with your favorite poultry seasoning. Wrap in plastic and refrigerate for 3-4 hours. Preheat MAK to Smoke with your favorite poultry pellets. I love cookinpellets.com premium perfect mix! Smoke spatchcocked turkey for 3 hours. Bump pit temp to 325ºF. Cook turkey until internal temp at the thickest part of the breast reaches 170ºF. Took 5 hours for a 14 lb gobbler. Rest turkey under a loose foil tent for 15-20 minutes before carving and serving ... Enjoy!!!
