Title: Mediterranean Style Chicken Kabobs
Post by: Smokin Papa Steve on May 17, 2018, 09:55:28 AM
We are big fans of Mediterranean, Turkish, etc cuisine and often each their chicken dishes so that is the inspiration for this cook.  Basically you marinate chicken thighs in whole milk plain yogurt with assorted spices and then grill.  On the platter I placed some toasted pita bread to absorb all the juices from the finished chicken.  It is a fun and easy to prepare dish and yields plenty of food for all.

The basis of the recipe is below taken from the internet.  I did add some other spices that I had laying around.  You can mix and match to your liking.  Again this is real easy to do and the end result is a juicy tasty meal.  Cook to about 165 IT and let sit for a few minutes

1 cup plain whole milk Greek yogurt
2 tablespoons olive oil
3 tablespoons freshly squeezed lemon juice
2 tbsp ketchup
6 finely minced garlic cloves
1 tbsp kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
1 1/2 teaspoon cumin
1/8 teaspoon cinnamon

Thanks! Nice and simple... gonna give it a try!  How long do you let it sit in the yogurt mixture prior to cooking?

I let it sit for about 6 hours including 1 hour on the skewers at room temp prior to grilling.
