Smoked another meatloaf today. We had a butternut squash on hand and figured, what the heck, and put it in the 2 Star with the loaf. Split it in half, rubbed with olive oil, and some S&P. Put them both in at the same time on SMOKE for 1/2 hour, then bumped it up to 350, until the meat was 160 internal. The squash was tender and perfect at the same time.......good combo! Peeled the skin off, cubed it, and hit it with some butter, and more S&P. REALLY good! A definite repeat. Not only did it pair well with meatloaf, the cook times we identical. I like it.

Love that..the squash can also use a lil melted butter with a lil bit of brown sugar melted in it with some cinnamon too..just sayin .☆´¯`•.¸¸. ི♥ྀ.

Thanks folks! It was torture not to add brown sugar or honey, but trying to throttle back on sugar, and simple carbs. Still darn good with just the basics.....olive oil and S&P!

We do acorn squash that way. I think that vegetables that are smoked really add a wonderful flavor to the veggies. In Nashville, TN, Peg Leg Porkers BBQ served up smoked green beans that rival their barbecued meats. Sooooo good that I order 2 sides of the beans when I eat there.
I love how the 2 Star is so versatile. Can cook anything in it.
