So after getting some great ideas on my really first long cook after an auto accident I decided to go with my version of Beef Wellington. No it's not the standard Beef Wellington you see on the T.V but it's the Low Carb version ;)
I used Alomnod flour, Vital Wheat Gluten & part of a bread yeasted starter I have made for the bread cover and I rump roast for the meat

I slow cook the roast to 146 then wrpped in foil took it to 195 before resting a bit, then into the fridge to chill before wrapping in dough

Starter seems to really help along with wheat gluten. I'm still working on recipes to get them to be consistant

Yeah, I had to look at your posts last night as I thought I had missed where you posted the recipes. I see it's still in progress. Looking great though (and after looking at all the old posts again I think you are certainly doing something right!).
