Those are caveman style ribs buddy. Nice bark on b all sides.

I start by cutting them in individual pieces then rub with CYM and rub.
Then I start the smoker off at 250 and I use an A-Maze-N tube for extra smoke. I let them go 1/2 to 3/4 hr then I add the bacon on top to melt down on them
After 1 1/2 hr I start to spritz with Angry Orchard's "Crisp Apple" and sprinkle a little extra rub on them . I do this every 1/2 hr then I turn them over the get the other side bark started. From there I flip ever 1/2 hr . It's important to keep turning them or they won't get the bark. By the 3rd hr I turn the heat up to 275 and keep spritzing
By the 4th hr they are finished ( I ck with a tooth pick) Thanks to Sparky ;) If some of the larger pieces are not I turn the heat up to 300 just to try and finiash
