Title: Really digging the results of mayo chicken

Two spatchcocked birds given a 5 hour brine

Mayo with some granulated onion, garlic, and paprika on one.

Lemon zest, lemon juice, rosemary, and butter on the other (no mayo)

Mayo one was the bomb. Flavorful and crazy moist!

Pappy,

That looks delicious! Any difference in the skin texture between the two? I have to get out there and try the mayo. Thanks for the kick in the butt!

Ever since I tried it this past year, I rarely do one without mayo any more.

It was an article I read In Cooks Illustrated. Conclusion, more hype then any benefit to the bird.

Note to self, just slather flavored mayo over and under skin....stop messing around.
