Two spatchcocked birds given a 5 hour brine
Mayo with some granulated onion, garlic, and paprika on one.
Lemon zest, lemon juice, rosemary, and butter on the other (no mayo)

Mayo one was the bomb. Flavorful and crazy moist!

Ever since I tried it this past year, I rarely do one without mayo any more.

It was an article I read In Cooks Illustrated. Conclusion, more hype then any benefit to the bird.
Note to self, just slather flavored mayo over and under skin....stop messing around.
