Title: Mechanically Tenderized Meat
Post by: Pappymn on July 27, 2013, 08:48:15 PM
Steady now.....this is a family site.

Saw this on another forum (I only peaked for a minute....and then straight back to LTBBQ) ???

http://www.consumerreports.org/cro/magazine/2013/06/has-your-steak-been-mechanically-tenderized/index.htm

Does this bother anybody?  The other site made it seem like a big deal. Doesn't get me too excited.

From what I have read you need to be careful if doing this.

Would like to see more weigh in on this.

I hate this practice. Years ago one of the major meat suppliers was doing it to their product and it didn't go over well at all. Swift??? Armour??? Can't remember now. Apparently Costco is doing this do their meat and for just that reason I've stopped buying beef there after 12 years of membership and bragging about their quality beef. There has been instances where the machinery has not been cleaned properly and people have gotten sick from it. Just my 2ยข

If I'm not mistaken, the Publix food chain (mainly the Southeast) used to do this "in house" and you could actually see the little needle holes in the beef. Makes "Select" beef eat like "Choice"..........

I buy from Costco all the time and honestly never really paid any attention. Now I will take a second look ::)

I'm sure there are many on these BBQ forums that do the same thing at home occasionally with a Jaccard.
I do.

But you know your Jaccard is clean. Industrial equipment not so much ::)

I have to admit that I am not bothered by it.  Being completely honest, I don't get bothered by too much when it comes to food safety.  I have eaten things that "would make a billy goat puke" (quoted from the movie First Blood).  Plenty of things bother me (like people calling grilling BBQ or smokers using TQ simply for smoke ring - though I will use it for practical applications), but not this.

Now I know doesn't mean I going to stop eating my steak MR. Otherwise, I just wouldn't eat the steak.
