Title: Dinner tonight - burgers using New York strip, turkey tenderloins, and sausage

Simple dinner; nothing special, but tasty - home ground meats, smoked cheese, and toppings.  We like good quality beef in our burgers and some kind of pork, and occasionally turkey.  We justify using steak for ground beef because we can always get some kind of steak cheaper than we can get 85% beef in the grocery stores.  Sure, we need to take the extra step to grind the meat, but it is safer, fresher, and way more tasty than grocery store ground.  Additionally, we can add whatever fresh herbs and seasonings while the meat is being processed.  This time we used choice New York strip that we purchased for $2.49/lb, a small chub of Jimmy Dean sage breakfast sausage, and turkey.


Meats: New York  strip, turkey tenderloins, Jimmy Dean sage pork breakfast sausage (the glass of wine helps keep the cook on task)

Trimmed the beef fat, cut into strips ready for the meat grinder - blended in Montreal Steak Seasoning

Thick with Bradley smoked cheddar

Finished burger - topped with Walla Walla sweet, tomato, shredded cabbage, mustard, Tabasco Chipotle - the burger was butter tender due to the added turkey and the the beefy umami complementing the savory sage sausage.

Not sure about the turkey but looks like a winner. I doff my hat to anyone who can find Choice NY Strip for a low enough price to grind (never under $5-6/lb here).

Thanks for the comments folks!  Tonight I'm making chili with beans and tomatoes  :o [..ducks and runs]

The meat is a couple more New York strip steaks - need to get them eaten.  The chili is in the oven now, and I'm looking forward to a bowl topped with smoked cheddar

Sonnenberg's is a butcher shop in Spokane washington that offers meat at reasonable prices as long as you purchase the cryovac packages - each time they have a different special.  On this last run I managed to get the New York Strip for $2.49/lb, boneless ribeye for $2.95/lb, and a packer brisket for $1.28/lb.  With prices like that, I don't mind cutting the meat at home into serving sized packages

I've been living here for 25 years and only a couple of years ago, I learned of Sonnenberg's from a colleague - I guess I need to get out more often, or I'm just a slow learner

pz. That is a great looking burger and at the prices you pay for the meat I would not have any issue with what you are doing. No wonder you do you chili with NYS steak.
