Haven't been around much but that doesn't mean I haven't been smoking. Just one quick pic of a hickory smoked meatloaf. The mix is ground beef and sweet Italian sausage, 2 eggs, oats as a binder, a healthy healthy dose of Big Moe's BBQ sauce from the folks at Carolina Treet, Texas Seasonings's "The Juicy Pig" Rub, onion powder and Worcestershire sauce. Mix all together and into the MAK burning BBQer's Delight hickory pellets at around 220-225 for around 3.5 hours to an internal temp of 160 degrees. The glaze is more Big Moe's sauce. Sorry for such a large pic. Not sure what the heck happened there.

Looks delicious - I'd never thought of doing a smoked meatloaf, but will definitely be giving this a go
