Title: No Foil Was Harmed In The Cooking Of These Ribs

It was a looonng Winter and Spring has been cold and wet so it's been a while since ribs graced the menu here. And with all the talk lately of foil or no foil, I thought it was time to cook big boy ribs on the pellet grill. Trimmed up a rack of spares, a bit of mustard, Adobo spice, and a generous coating of Fine Swine & Bovine. Into the fridge for the morning to rest for 6 hours. I cleaned up and vac'ed out the pellet grill. When done filled the hopper with oak, hickory, and cherry pellets, and dialed her in to 225F. Ribs on for 4 hrs , spritzed every 30 min. with apple juice, worcestershire, and a bit of cherry juice. After 3 hrs put baked beans and potato wedges on. One hour later dialed grill up to 350F for an hour to finish all.   Plated with a nice salad and a couple of New Belgium "Summer Helles".......very tasty indeed!

OMG Hiker, I totally feel your pain (never realized how close you are)( I need to ensure you are included in any field trips that are near Pappy)).  I have vac packed pulled pork but now I need to do ribs just to tied me over

Everything looked sooooo  good :D

oh ya.  we needed a rib cook around here.  love the crust on them.  they look really, really good.  I will take the 6th picture w/ milk plz.
