Zucchini Parmesan 4 Servings 225 calories a serving.
Zucchini 19 ounces - 85 calories - cut into 1/4ths lengthwise
Hunts Traditional Spaghetti Sauce 3 cups - 300 calories
Mushrooms fresh white 2.25 ounces - 10 calories
Mozzarella Cheese Shredded 4 ounces - 320 calories
Parmesan 1/2 ounce - 45 calories
Italian Bread Crumbs 1/2 ounce - 54 calories
Total 850 calories
Olive oil spray to baking dish
Layer of zucchini,spread 1/2 of sauce,sprinkle on mushrooms,mozzarella cheese and Parmesan
2nd layer of zucchini, spread 1/2 of sauce,sprinkle on mushrooms,mozzarella cheese and Parmesan.Sprinkle on Italian bread crumbs.

Put in preheated 350 F oven for 40 minutes uncovered.

Three things.
Let sit 20 minutes before serving to soak up juices,important!
Next time I will make single layer in a bigger pan and less sauce. It tastes good,but was too wet.
I ate 2 servings,450 calories.Not easy finding a low cal dinner every day so I posted this to give ideas,a little tweaking would nail this.

It looks very satisfying. If you put TVP into it....would it runt he calorie count up much? Looking for ways to still have at least the feel of meat in the dish, and lose some "baggage... ;) ;D

TVP and meat run about the same,80-100 cals an ounce.Could cut the sauce in half and add 1.5-2 ounces meat instead,or add 4 ounces meat with less sauce and only add 160-200 cals total.Dang sauces seem to be real calorie packed.
TVP,there's a controversy for ya.Ive heard that story both ways from friends and sources I respect,so dont know which way to lean on that.I would sure eat it (probably have a lot more than I know) ,but if meat available would chose meat first.
I think single layer,less sauce would make the cheese adhere better to top too.Double layered sauce just fell to bottom,wasnt needed.Was good though,I'd just like it to be more lasagna like.Mrs thought it was good as is.

Have to admit, the TVP thing is new to me. Did some looking to understand and found dozens of varieties available. I am always up for trying new ingredients, especially with health advantages. So, do any of you have some suggestions for the "best" TVP?

Having grandparents with Italian ancestors, I'd have to agree with that. ;)
