Three Amigos working on a rainy day.

Woke up and mowed the yard. Looked like it was gonna pour down. 30 minutes after I get done, it rained for about  hours straight. That didnt deter me from getting a smoke in  ;D ;)

The wife and kids unanimously said they wanted ribs. So the story begins.
All out of Zack's, need to get some more  :o


Two slabs of poke spares cut St. Louis style. Saved the two pieces that I trimmed off and threw them in with the ribs. Used some Guy's Seasoning on those pieces.
The ribs went in the Traeger with Hickory, trying to use up all my Traeger pellets.




Meanwhile in the Bradley, I had some chicken thighs. Sorry, no pics of this as I forgot to take some. The last pic will have the yard bird in it. Trust me on this.  ;D  I dont smoke unicorn meat  ;D ;) :o

Made some ABT's for Mr. SRG to play with along with some corn.

Here it is all plated up. It was goooooood. Thanks for looking. I gotta cook what the kids will eat. No meal is complete with the kids favorite, Rice and Gandules.

The rice is made with olive oil, oregano, tomato sauce, sazon goya, adobo (not the sauce) and sofrito. Not the stuff you get at the store. This is home made from onions, garlic, bell peppers and cilantro. All put in a blender until smooth. Sorry there are no measurements, my wife learned how to make it from my mom. I just called her and she said there are no measurements, if someone wants to learn, they can come watch me  ;D :o.
There is also a certain way you cook it. You have to cook the sofrito in the tomato sauce first and then go from there. Sorry Im not much help with this, its one of those things passed down from way back.  :-[ :'(
I will post some pics of the sofrito when we make more, we usually make a lot and freeze what you are not going to use any time soon. The recipe for it is; there is no recipe.  :o Its so many onions to so many heads of garlic to so many bell peppers and so on. Basically you get it to the color you want. A nice vibrant green.  ;D

It's way too salty for my taste. The rib parts weren't bad with it but not as good as the zacks on the ribs ribs. I cooked both with the same things other than the rub  I'm wordering if I should dump it out and mix it well to see if it does anything. If not I will cut it with something else. Brown sugar maybe. ??? Any suggestions?

Pretty much is all I use to smoke cause there's not much of a selection here. They are local as in 40 miles from my house so it's pretty much everywhere.  I like the Zacks grilling spice for grilling. I also have their brisket rub and sweet rub.
I recently ran out of Head Country and I'm down to a Lil bit of Jans rub.
The one I want to try is SURE SHOT SID'S GUNPOWDER SEASONING. I can only imagine how it tastes. :P
