Think of jambalaya as a thick rice stew with veggies & meat in a chicken broth.
Works great in a crockpot as no roux is made.
Trinity, garlic & some okra, with smoked chicken & ham.
Couple bay leaf, pepper.
A can of diced tomatoes.

Bout 90 minutes before serving add sliced sausage & 1&1/2 cop rice
Season after cooking , many of the ingredients are salty so I vary seasoning between Tony's cajun seasoning & caynne pepper depending on wheather salt , heat or both needed.
