I've been craving grits like a maniac since Smokin' Don posted his shrimp and grits recipe awhile back... Finally got the chance to make some! A good friend of ours gave us some freshly caught steelhead this weekend, so James and I had ourselves a special treat last night!!
Rinsed the fillets, then sprinkled with a little kosher salt and brown sugar.
Tossed them on the MAK to smoke for a couple of hours while we retrieved our errant goats (whom have recently discovered the grass really IS greener on the other side of the fence).
While the fish was finishing, I made some creamy cheesy grits
2 1/2 cups water
1/2 cup cream
1 cup polenta/grits
1/2 cup shredded cheese
sprinkle of Tony C's
Pulled the fillets at 140°
Plated the fish over the polenta, and finished with some Parmesan, green onions and a drizzle of (store bought) balsamic vinegar glaze.
It was SUCH an easy dish to make-- but tasted SO GOOD. Lots of great flavors that combined well, and we both put some extra balsamic glaze on the fish. I usually give James whatever I can't finish on my plate, but this one I guarded protectively so I can have my leftovers for lunch today!!!
