I “
volunteered” to do wings and a ham for a retirement party at my wife’s work. Ham has been on for about 2
hours and the chicken a little over an hour.

Chicken did sound good for today so I took some legs and wings and marinated them in buttermilk for about 4
hours. They were seasoned with Oakridge BBQ Secret Weapon. I am burning Lumberjack MHC and started at
an initial temp of 200.
Legs and wings are done!
Plated with some homemade potato salad that I threw together this morning. I drizzled some of Teesquare's
blackberry jalapeno sauce on the wings and legs. This sauce is excellent! Even my wife loves it. No real recipe
for the potato salad I just boiled some red potatoes, eggs, chopped up some onion, added olives and some paprika.
The dressing was mayo, spicy brown mustard, pickle relish and some pepper.
No measurements used, just seasoned to taste.
This is just the start of a long weekend. Going to be doing a brisket, butt and some babybacks over the next 3 days.
My wife stated that the wings lasted all of about 15 minutes (there were 4 dozen) and that there was no ham left
and it was a 9.5 pounder. A great Friday to be cooking! Temp in the mid 80's with a slight breeze.
