Don those both look fantastic - particularly interested in the potato stuffed fatty.  Do you have any thoughts on how to incorporate eggs into that as well?  Could you put scrambled eggs in too or would they be too done if they were pre-scrambled?

SJ, I did add eggs to the pulled pork with cornmeal much like a meatloaf and they were not cooked until I did the fatty. I didn't add eggs to the potato stuffed one but you could. The oil I fried them in helped hold them together. Don
