Sockeye Salmon on the PK

Got a nice deal on a swell looking sockeye fillet yesterday,  so fired up the PK tonight. Rinsed, dried, and then oiled the fillet with EVOO. Cut it up into 3 pieces,  2 nice portions and a small piece for Bella! Seasoned with sea salt and fresh ground black pepper.  Heated up the GG's and cooked skin side up for 4 minutes turning 90 degrees after 2 minutes, then flip skin side down and cook 4 minutes.....done!
Served with a Thai cucumber salad and wild rice. Great quick meal!

Art this is a recipe from Maggi, (makers of Sweet Chili Sauce) that we tweeked a bit.

2 med. cukes, peeled, halved, seeded, and thinly sliced
1/3 C red bell pepper, sliced
1 sm. jalapeno or serrano pepper, seeded and thinly sliced
1/4 C fresh lime juice
2 - 3 T Maggi Sweet Chili Sauce
2 T basil, thinly sliced
2 T red onion, diced
1/4 tsp salt
2 - 3 T unsalted peanuts, chopped

Combine everything but the peanuts, refrigerate 1 hr.
Sprinkle with peanuts before serving.
Lots of flavor for a cuke salad!
