2, Pork Shoulders in the PBC

Put two 7.5 pound pork shoulders on the PBC with regular Kingsford, half a dozen Hickory Kingsford and 4 chunks of Apple wood. After 4.5 hours took them off wrapped in tin foil with some beer and finished off in the oven at 350 until internal was 200. Let them rest in the oven for another hour, shredded and placed in slow cooker then covered and into the fridge. Taking them to work tomorrow for lunch.

That is bringing a lunch to work.  Beats my salad I have everyday (well everyday when I get a chance to eat)

Good looking pork Tom! Quick question for you how smokey were they? Seems to me, and this my opinion only, that if you
used 4 chunks of applewood and several chunks Kingsford hickory in a 4 hour cook they would be real smokey. Again, your preference may be different than mine. This
is not a criticism, only an observation.

I also like just a hint of smoke not overwhelming smoke.  In this case I got heavy smoke for the first hour and then it died down quite a bit.  The smoke ring wasn't huge and once its all mixed together it turned out fine.  If this was any type of a poultry cook then yes this would've been too much smoke. And in reality with the oven time and cool down time it was closer to a 8.5 hour cook.  Thanks for question and Thanks for watching, your feedback and suggestions are really appreciated.  :) :)
