RJ, Welcome. It seems there is a cabal of good cookers forming in northern SC. Let me change that because the word "northern" and SC do not go well together. Let us say Upper South Carolina. Dee

SC has 3 area's Low Country (the coast) Midlands (well duh) and The one and only Upstate Area. Also each has their own sauce taste in BBQ sorta like Eastern NC and Western NC. The Low Country is a mustard based vinegar sauce, Midlands is a tomato based vinegar and the Upstate has both and some thicker tomato style sauces
