Black Iron Skillet Game Hens

Dinner tonight is game hens, leftover baked beans and a tossed salad.  Hens were brined for 5 hours in Oakridge
BBQ Game Changer.  They were seasoned with garlic pepper and Loot n Booty Gold Star Chicken rub.  I made a
bed of sliced onion and about 50 cloves of garlic for the hens.  I added a half stick of butter to the mixture.  I am
cooking them in my large cast iron skillet.

Ready for the Weber Performer.  I am burning KBB with a couple chunks of cherry wood in the Slow n Sear. 


Put onto a 400 degree grill.


I rotated the iron skillet at the 30 minute mark for even cooking.


Another 30 minutes and they are done.


My plate!


Dinner was delicious.  The Weber stayed at 400 degrees, grate temp, throughout the cook.  I really like the Slow n Sear.

Those "toy" chickens look mighty good.

I think it was the Pit Boys Jack. Though I did post a cook or 2 doing chickens in the iron skillet per the Pit Boys instructions.
You ought to try the "toy" chickens Jack. There are good and besides they are only $2.00 each at the commissary.
